Just found a website with a chart showing rh %'s with corresponding temps. For ex., it shows an rh of 57% for a temp of 76. Can I use this as a guide in my humidor? Will the ups & downs of temp and rh due to outside and inside conditions harm my smokes? I keep my humi in my office where the temp fluctuates due to outside conditions, and the rh goes up & down accordingly. Will it all balance out?

no. dont worry about that. just aim for 65%- 70% RH and about the same as temp. as long as you are close, youll be fine.
